Dresdner Style Stollen
this dresdner-style christmas stollen is inspired by historic german recipes, follows the strict guidelines of dresdner stollen and traditional methods. baker zach and certified master german baker pablo giet collabed on the loaf. (huge thank you to pablo for sharing his knowledge and hands). highly enriched with butter and dried fruit, it is slowly fermented, carefully baked, and finished with butter and sugar. a once-a-year bread meant to be enjoyed throughout the holiday season. traditionally served at breakfast or in the afternoon with coffee or tea. the story germany, 1450 — christmas lent during advent, strict church fasting laws forbade the use of butter. bakers were limited to oil when making christmas bread, a symbolic loaf representing the christ child. the prince of saxony petitioned the pope to lift the ban. unsuccessfully at first. forty years later, pope nikolaus v granted permission for butter to be used, marking the birth of butter christmas stollen. bakers paid a special church tax known as “butter money,” which helped build and restore churches throughout the region. originally, only the towns of meiben and siebenlehn were permitted to bake stollen. during the thirty years’ war, dresden earned this privilege as well - and to this day is celebrated as the spiritual home of the world’s finest stollen. • naturally shelf-stable for several months when wrapped and stored cool and dry • inspired by traditional german baking standards

Galette des Rois
Traditionally enjoyed on Epiphany (January 6), the Galette des Rois marks the end of the Christmas season and commemorates the arrival of the Three Kings. Our Galette des Rois is made with all-butter puff pastry, folded and baked until deeply golden and crisp, then filled with a rich, fragrant almond cream (frangipane). Finished with classic scoring and a glossy bake, it’s simple, elegant, and meant to be shared. In keeping with tradition, the galette contains a whole almond baked into the filling rather than a figurine. The guest who finds the almond is crowned King or Queen for the day.
